How To Make Marmalade?

Marmalade is actually easier to make than what it's sometimes made out to be. For orange marmalade (though any fruit can be substituted for the oranges), you'll need 3-4 medium-sized oranges, 2-3 medium lemons, 5 cups of sugar and 3 oz. of liquid fruit pectin. The first thing you'll want to do is prepare the jars and lids. Then peel the skin from the fruit (only let a small bit of the white to remain) and cut the peel into very thin slices. Place the peel and 1 1/2 cups of water into a medium-sized pot, cover and simmer for 20 minutes stirring occasionally. Cut, peel and discard all of the white and skin from the sections of fruit. Chop the fruit and be sure to save all the juice. Add the fruit and juice to the water and the rind, cover and simmer for 10 minutes stirring occasionally. Add the fruit pectin to the pot and turn it up to a full boil for 1 minute. After it's been boiled, remove from heat and skim off any foam with a metal spoon. Put the mamalade in a liquid measuring cup and fill the jars IMMEDIATELY until it reaches about 1/8 of an inch of the top. Clean any spilled marmalade from the rims and threads with a damn cloth. Wipe the hot lids dry and place them on the jars, screwing them tightly. Invert the jars for 5 minutes then turn them upright. You'll want to check the seals after 1 hour to make sure the lids are curving down.
